This case study focuses on making crispy veggies.

What was the problem that you encountered? Were there any solutions? Did the solutions solve the problem?

Yeah. We all know that vegetable is good for our health.

是的,我们都知道蔬菜有益健康。

 

During the nutrition consultations, we encounter the problems that people are usually not eating enough vegetables.

在营养咨询过程中,我们遇到了一个问题,人们往往没有摄入足够的蔬菜。

 

There are a few reasons for that, why they don't like vegetables. Firstly, they may complain that the vegetables’ colour is not good, even the texture is not. They don't like the textures, or even they don't like the cooking methods of the vegetables.

Also, they may complain that it is not convenient for them to bring and cook the freshly vegetables in school or even bring it to the school.

In traditional nutrition consultation methods we usually convey, try to convey proper nutrition knowledge to them and try to let them to initiate by themselves.

Although this method still works for some people, they may give us feedback that it is not easy for them to adopt it in real life.

How did you come up with your innovative solution?

您如何想到这么有创意的解决方案的?

 

Actually the solution was stimulated by observations of children’s eating behaviors, especially my child.

I have two daughters. When I gave them some snacks, I observed that children like snacks, especially for the crispy one.

Maybe the crispy one just like eating the potato chips.

That's why this eating behavior stimulated me for making crispy vegetables.

What was new about your solution?

你的方案的创新之处是什么?

 

That solution actually is not totally new because dehydrated crispy vegetables, some of them are sold in commercial. But for commercial food, they usually make vegetables in dried ways and also they add too much sugar even add salt and cooking oil onto it. They want to extend the shelf life of the food, so that's why they usually add the preservatives into this.

实际上这个方案并不是全新的,因为市场上也售卖一些脱水的酥脆蔬菜。但对于这些商业食品,通常对蔬菜进行脱水,然后添加很多糖,甚至食盐和烹调油。而且商家还希望延长食物的保质期,这也是他们添加防腐剂的原因。

 

So my new solution is, to make it like just home-made methods, to make the crispy vegetables. Without adding any sugar, salt and oil that makes the people more healthy to eat, and also is more convenient for them to bring to school or even adults they can bring it to the office.

所以,我的新方案是用类似家庭烹饪的方法制作口感酥脆的蔬菜。不添加任何的糖、食盐或食用油,使人们饮食更健康,而且便于孩子带去学校吃,甚至大人也可以带去办公室。

 

Did you encounter any opposition when you tried to put your solution into practiceIf yes, do you know why?

你在尝试实施新方案的时候,是否遭到了反对呢?如果是,你知道为什么吗?

 

Yes, of course. This new idea also had some oppositions.

是的,当然有。这个新想法亦面对一些反对。

 

For example, the parents may question about if I make the fruit or vegetables in dried, dehydrated ways is there loss of some vitamins?

比如,家长可能会质疑,如果对水果或蔬进行干燥脱水,这样不会流失一些维生素吗?

 

So, I also explain to them that yes indeed, they are partially right. But nowadays we don't have any problems about vitamin deficiency. Right?

所以我也向他们解释,确实是的,他们的想法部分是对的。但今天我们没有发现维生素不足的问题啊。

 

Our main focus is to increase the amount of fibers. That's why in this even dried way, the fiber will not be lost in this cooking method.

I think this solution can solve the not enough vegetables problem

What's the biggest challenge throughout your attempt? How did you overcome this challenge?

你在整个尝试过程中遇到的最大挑战是什么?你如何克服这个挑战的?

 

Yeah, because I'm not a staff chef, right? So although I have some cooking skills, that it is quite a challenge for me.

因为我不是一个大厨,对吗?尽管我懂一些烹饪技巧,但要做到这样对我来说仍是很大的挑战。

 

I need to prepare the crispy vegetables in adjusting the appropriate time and even the appropriate temperatures.

我需要不断调整合适的时间,甚至合适的烹饪方法来做出酥脆的蔬菜。

 

We don't have any menu for making this.

我们没有任何菜谱可以借鉴。

 

So we need to try each vegetable for several or even ten times, twelve times for making it more tasty in good texture, attractive colors and try to use this good texture, good color to attract the children to eat it. The challenge is we need to use much time to prepare even one, one type of vegetable.

所以,每种蔬菜我们都要尝试几次,甚至十次、十二次才能把它做更美味,口感不错、色泽诱人。并尝试用良好的口感和色泽来吸引孩子吃。所以,这个挑战是我们要用更多的时间来准备仅仅一种或一种类型的蔬菜。

 

How did the children and their parents react?

Uh, it’s very happy that children significantly increase the intake of the fibers or the vegetables.

很开心看到孩子的纤维素/蔬菜摄入量明显提高。

 

They like the crispy vegetables because they think that that vegetable is just like eating the chips or even the seaweeds. So they like his snack. That's why they increased the intake.

孩子喜欢酥脆的蔬菜,因为他们觉得蔬菜吃起来就像薯片或海苔一样。所以他们喜欢自己的小吃。这也是他们摄入量提高的原因。

 

Parents are happy about that. The response of the parents is they are chasing me to teach them how to prepare these crispy vegetables.

What was the most important factor that led you to succeed?

你认为使你成功的最重要因素是什么?

 

I may think that the major, feedback is right.

我认为主要是反馈是对的。

 

The first one maybe I think the most important is creativity. We don't stick to the old practice.  We need to think out of the box.

我认为第一个可能最重要的是创意。我们不能因循守旧,我们需要跳出思维框架。

 

We tried different ways, different methods and tried to improve the solutions.

我们尝试了不同的方式、不同的做法,并尽力改进方案。

 

Secondly, it’s collaboration.

第二是合作。

 

I think this one is really important, because I have good teammates. I have good colleagues. They helped me to cut the vegetables, even they helped me to try, to taste the vegetables and tried to make it more appropriate or good textures.

我认为这一点很重要,因为我有很好的队友,很好的同事,他们帮我切菜甚至还帮我试吃,努力使做到更合适或口感更好。

 

Lastly, I think they appreciated, appreciations from the students and the parents. This one is really important for me, because this appreciation can motivate me to go forward.
