今天我们一起学习的是中餐席位礼仪
中国的饮食文化历史悠久
其特有的文化
也多次被搬上银屏
比如《食神》
《满汉全席》等等
古人云
民以食为天
而在“食”中又以
“坐”为先
所以无论是便宴
家宴还是正式宴会
最讲究的一个礼仪
就是安排席位
主宾尊幼各有说法
坐席排列
从来都是宴会里最大的政治
宴请者要通过桌次排列
将客人清楚划分
谁应该在哪桌入座
每桌上每个座位
又该如何排列
这里无疑牵扯到
客人的各种等级和属性
《鸿门宴》里记载
项王
项伯东向坐
亚父南向坐
沛公北向坐
张良西向侍
这里面透露的是
中国古代的礼仪
和人物关系的内戏
至今
在中餐宴会中
传统的尊卑位置
仍然适用
总的来说
在中餐席位礼仪中
最主要有两个方面
一 位次排列
二 桌席排列
位次排列也就是位次安排
即每桌每个座位的安排
我们来看看
在中餐中大多是这样的圆桌
假如以10人桌为例
位次排列首先
要解决的是确定主人位
那么如何确定主位
尾位又在哪里
其他位次又如何排列呢
其实方法很简单
我们先来记住位次排列的原则
好
五句话记住了
那么我们来针对不同的情况具体排位
如果宴席中只有一位主人
那么先确定主人位
然后再以主人位为轴
去确定其他的位置
所以看下整个房间
门的位置
一般情况下
正对着门中央的位置就是主人位
通常主人位的正后方
会有不同的大背景或者装饰画
再有看看桌上的餐巾
如果餐巾叠成不同花型
那么也很容易辨认出主人位
房间内设有专门服务员的餐厅
一进门看看服务员所站的位置
其实服务员就站在主位的旁边
确定了主人位
主宾的位置就很好确认了
主人位的右手边的位置
一定是第一主宾
左手边坐谁呢
对了
第二主宾
每桌的主位是谈话中心
并且由主人亲自服务于第一和第二主宾
越重要的客人离主人位越近
这叫距离定位
其他位置的排列按照距离定位的原则
穿插排列一个主方一个客方
先右后左的方法依次排列
这样排位方法
可以让每一位客人
都有主人方的陪同人员照应
同时还要注意一下尾位
就是背对着门
同时最靠近门的那个位置
那个位置一定是
留给主方陪同人员的
坐在这个位置的人
就需要更多地和服务员交流
保证整个宴请顺利进行
会有两种情况
一 同性双主人
二 异性双主人
比如单位总经理和副总经理
一起宴请客人
都是男士
那么如何确定两个主位呢
第一主位还是在面门居中的位置
第二主位则是主位正对面
也就是背门的位置
这样整个桌席就能形成双中心
更好地照应所有的客人
两个主位确定后
接下来确定主宾和副主宾的位置
1号主人右手依然是1号主宾
左手是2号主宾
3号和4号主宾
分别按照右高左低的原则
位于第二主位的两侧
其他人员以离门远为上的原则
分别安排
这种情况通常是
主人夫妇就座于同一桌
男主人就座于第一主位
女主人就座于第二主位
主宾和主宾夫人
分别在男女主人的右侧就座
如果主宾的身份高于主人
为了表示尊重
可安排其坐在第一主位上
而男主人就坐到主宾的位置上
在宴会上
若餐桌不止一桌
则需要采用正式的方法
排列桌次
主桌排列之后
其余桌次的高低以
离主桌远近而定
近高远低
平行时
则右高左低
主桌应总是处在突出的位置
以小型宴会中
常见的两桌和三桌为例
两桌横排时
以右为上
两桌竖排时
当餐桌距离正门
有远近之分时
以距门远为上
三桌横排或三桌竖排
以居中者为上
确定主桌
其他桌次居右者为上
居左次之的原则排列
如果是大型宴请
位次的排列的基本原则有
各桌之上均有一人代表
各桌主人在座
其位置一般应与主桌主人同向而坐
有时也可以面向主桌主人而坐
各桌上客人位次排列
应根据其距离该桌主人的远近而定
以近为上
以远为下
各桌上
面向该桌主人
与该桌主人的距离相同的位次
讲究以右为尊
每张餐桌上所安排的用餐人数
以限制于10人内为佳
并宜为双数
餐桌排列的方法有
横排
竖排
花排
正排等
具体采取哪种排列
需根据场地和美观的原则
来确定
