中国人有云 民以食为天

用英文表达 你可以说

食物是人类的首要必需品

食物是第一大需求

或者食物是人类的上帝等诸如此类的表达

本节课 我们将学习中国的八大菜系

在中国 烹饪的方式多种多样

但中国厨师们选出了八大传统菜肴作为最佳的烹饪方法

中国八大菜系的特点

鲁菜 以新鲜可口的海鲜食物为主

川菜和湘菜 辛辣

粤菜 浙菜和苏菜

善用海鲜 一般偏甜 口味清淡

徽菜和闽菜 多包涵山地野味

1.广东菜

中文 粤菜 Yuè cài

味甜 烹制方法以炖 蒸煮为主 加入各种清淡酱汁

粤菜在国际上享誉盛名

广东省和香港以精美的海鲜食物和米质食物而闻名

两地食物种类繁多

菜品调味简单 味道清淡 通常偏甜

2.四川菜

中文 川菜 Chuān cài

辛辣多麻

使用大量辣椒 大蒜 姜和花生调味

川菜是中国传播最广泛的菜品

以四川花椒调味产生的麻 辣口味闻名于世

四川花椒在其他地方菜系中极少使用

川菜以成都 重庆菜为主 重庆曾是四川的一部分

3. 江苏菜

中文 苏菜 Sū cài

清鲜 咸甜适中 烹饪技艺精细

多海鲜和汤品 讲究色香味俱全

江苏省和中国最大城市——上海地区的菜肴

制作精巧 美味可口

苏菜的特殊之处在于 烹饪技术精巧 色香味俱全

苏菜厨师也注重烹饪健康食物

4. 浙江菜

中文 浙菜 Zhè cài

菜品鲜美多汁 食材有新鲜海味 淡水鱼 竹笋

烹饪技法丰富

浙江省位于江苏以南 毗邻上海

因此 浙菜烹饪方式与苏菜相似 但不及苏菜准备精细

浙菜更加讲求食物的新鲜

浙菜通常保持原味或者近乎原味 菜肴鲜美 脆爽 四季有别

5. 福建菜 闽菜

中文 闽菜 Mǐn cài

口味清淡 稍带酸甜 配料多用山珍海味

福建省以海鲜和制汤闻名

食材中加入大量的野味和海鲜 使菜肴具有别样风味

好比是一场烹饪上的狂野历险

6.湖南菜

中文 湘菜 Xiāng cài

尤以香辣 酸辣见长 烹饪方式以嫩煎 爆炒

蒸煮和熏制为主

湖南人离不开辣椒 湘菜可谓无辣不成菜

如果你喜欢川菜 那你肯定也会青睐于湘菜 因为它甚至比川菜还要辣上几分

7.安徽菜

中文 徽菜 Huī cài

使用多种野菜和野味作为烹饪材料 擅长蒸炖 重油

徽菜比闽菜更重野味

安徽是内陆省份 省内的巍峨山脉 比如黄山

蕴藏众多不同的野味及野生植物

8.山东菜

中文 鲁菜 Lǔ cài

味咸 烹饪以炖为主 多海鲜

山东省是最早的文化起源地之一 为北方菜系的烹饪方式奠定基础

海岸线绵长 因此鲁菜善用海鲜

简单的作料加以炖煮的烹饪方式 保留了海鲜的原汁原味

鲁菜喜用醋 盐调味

与南方菜肴不同之处在于 鲁菜喜食面食 包括面条

中国的八大菜系 哪一个是你的最爱呢

不论是哪一个菜系 你都可以找时间去犒劳一下自己
