本节课我们将学习如何谈论饺子

饺子是中国北方一道著名的传统食物

呈半月状是一种柔软的夹馅面食跟意大利小方饺差不多

饺子根据不同的馅儿和烹饪方式

比如煎饺 水饺和蒸饺有不同的名儿

饺子在中国南方也变得普遍起来

一般来说 南方人不喜种小麦或吃面食

所谓南方饺子的皮儿通常都是由米面制成

1.重要的中国新年食物

在中国的北方 饺子是一道传统的春节食物

在南方则不然

除夕之夜饺子成为

年夜饭饭桌上不可替代的一道食物

不过在某些地方 人们选择在除夕夜之后再吃饺子

饺子是中国菜肴的代表

饺子的形状和馅儿都有着文化寓意

这也是为什么在春节期间 对一些人而言饺子是不可或缺的

因为饺子表达了人们对美好生活的愿景

以及对美好祝福的憧憬

财富的象征

据说春节吃饺子能够带来财运

因为饺子的形状像古时候的货币元宝

每当招待亲戚朋友 或喜逢春节和其他节假日之时

中国人都会沿袭吃饺子的吉祥民俗

具有象征意义的饺子馅儿

芹菜馅儿代表勤奋以及由此衍生的财富

原因是Celery的中文芹菜发音像勤财qíncái

韭菜馅儿代表长久富贵

原因是Leek的中文韭菜发音像久财

同时它还象征着对家人身体健康 家和万事兴

以及幸福欢乐的祝愿

日久生情和

永久和平都是十分流行的短语

白菜馅儿代表对百年美好生活的祝愿

原因是Cabbage的中文白菜发音像百财

它还象征着新婚夫妇永驻爱河

比如说有著名的成语:

白头偕老 矢志不渝

蘑菇馅儿代表财富与好运的与日俱增

原因是蘑菇呈现出一副向上的箭头形状

象征着股市上涨 取得进展 生活质量的提升

或者是期盼年轻一代身材高大 学业进步等等

鱼肉馅儿代表多余的财富

原因是Fish的中文鱼发音同余一模一样

吃鱼肉馅儿的饺子象征着祈祷富足

在中国 年年有(鱼)余 surplus year after year 是流行的表达

代表着人们期盼年年都有剩余的粮食

牛肉馅儿代表经济强势增长

公牛是力量的象征 常为股民们所青睐

Bull market的中文牛市代表一段时期内股价的上涨

还有常用的牛气十足表达了人们对健康和幸福的追求

2.制作饺子英文亦作Jiaozi 的步骤

制作饺子需要4步

1) 用面粉制作饺子皮

2) 准备饺子馅儿

3) 包饺子

4) 开水煮熟

3.饺子的历史由来

早在三国时期(220-280)就有了饺子

大约在唐代(618-907) 饺子有了当代所见的形状

并作为一道菜肴装盘上桌

在1972年 考古学家们在吐鲁番阿斯塔纳坟墓挖掘出

埋藏的木质碗具 碗里有十多个呈新月状的物体

与现在的饺子形状相似

考古专家们认为它们是唐朝时期的监狱药丸

由此我们得知 吃饺子的传统在

1300年前就传到了西部少数民族地区

饺子在清代(1644-1911)十分流行

饺子馆随处可见

饺子生意的发展也最为迅猛

清朝时期有一位商人开了第一家饺子馆

由全家人打理 饺子生意世代传承

这一家人去到不同的省份

对中国式烹饪的技艺和传统进行梳理整合

4.张仲景和饺子的故事

有个古老的中国传说 饺子最初是由

医圣——张仲景制成的

这是个非常非常感人的故事

张仲景(约生于150-154 约卒于215-219)在长沙做官

在告老还乡返回南阳之时 他看到很多无家可归的人

白河边上天气恶寒把人们的耳朵都冻烂了

他决心帮助这些贫苦的百姓

经过研究 他研制了一个可以御寒的食疗方子

叫祛寒娇耳汤

其实祛寒娇耳汤就是一种汤

把羊肉和一些祛寒的药物放在锅里煮

熟了以后捞出来切碎

用面皮包成耳朵的样子

之后再下锅

用原汤将包好的馅料的面皮煮熟

饺子看起来像耳朵又因为其功效是为了防止耳朵冻烂

所以张仲景给它取名叫娇耳

张仲景让徒弟给每个穷人一碗汤2个娇耳

人们吃了娇耳喝了汤 浑身发暖两耳生热

再也没人把耳朵冻伤了

在某种意义上来说饺子以一种中医药膳或滋补饮食而问世

传统中医药之药食同源的智慧 由此可见一斑

总之健康饮食乃健康生活之本
