上节课

我们谈到了油炸食品美味可口 让人欲罢不能

讲了油炸食品之所以美味的原因

今天我想重点和大家聊一聊煎炸油之王—棕榈油

我国每年进口500-600万吨棕榈油

很大一部分是用在油炸食品中

棕榈油是我们同学们几乎每天在吃

但是都没有察觉到的油中无冕之王

马来西亚是世界上棕榈油的最大出口国

今天我们非常有幸邀请到国际油脂界著名专家

马来西亚科学院院士 博特拉大学的Tan Chin Ping教授

来和同学们聊聊煎炸油的主角--棕榈油

我们以访谈的方式 请Tan教授给大家介绍棕榈油

我是Tan Chin Ping教授 来自马来西亚博特拉大学

作为美食爱好者 我们都知道南洋美食享誉全球

煎炸食品用油普遍是棕榈油

它区别于其它烹饪油 如大豆油 花生油等等

Tan教授 您能为我们讲解一下

为什么煎炸食品要使用棕榈油呢

通常情况下

对于油炸食品 我们需要将热量传递给食品

在此特定情况下

如果使用水来传递热量则只能达到100摄氏度

但是如果使用油来传递热量

则可以达到100摄氏度以上

当需要将超过100摄氏度的热量传递到食品中时

油是一个很好的选择

就食用油而言

棕榈油的单不饱和和饱和脂肪酸的含量几乎相同

各占50%

因此 它们在油炸过程中非常稳定

并且在油炸食品行业和油炸食品中广泛使用

那市面上常见以棕榈油为原料的产品有哪些呢

通常

棕榈油用途广泛是由于以下两个方面

您可以从中果皮纤维(水果)中获得棕榈油

也可以从果仁中获得棕榈仁油

这两种油都具有不同的脂肪酸组成

并且由于这种独特的脂肪组成 它们非常通用

您可以从油类食品中获得棕榈油

例如食用油 人造黄油 起酥油

食品专用油脂(类可可脂 代可可脂 可可脂代用品)

同时

您也可以在棕榈基产品的非乳制奶精中使用

您还可以使用棕榈油作为介质得到各种烘焙产品或烘焙脂肪

我感受到棕榈油和煎炸食品是密不可分的

棕榈油为煎炸食品提供了良好的滋味

但是现在越来越多的人开始提倡健康用油理念

棕榈油经常用于煎炸食品

会不会对人体健康造成一定危害呢

总的来说

当我们谈论煎炸油时

当然这实际上也是我们饮食的一部分

我们不是在要求消费者食用100%油炸食品。

我们可以采用更加均衡的饮食

每周一次或每周两次食用油炸食品

这样定量下

我不认为食用油炸深层脂肪所用的棕榈油会影响健康

同样 就单不饱和和饱和脂肪酸而言

棕榈油具有非常平衡的脂肪酸组成

它们对高温非常稳定

与其他植物油(例如大豆油和菜籽油)相比

它们的氧化降解产物更少

确实 合理用油才是关键

我们都知道马来西亚是盛产棕榈油的国家

您可以简短的为我们介绍棕榈油生产及制造过程吗

目前 马来西亚和印度尼西亚的棕榈油产量位居世界前列

马来西亚的棕榈油产量排名第二

印尼排名第一

对马来西亚而言 棕榈油是主要的农业作物

我们有超过500万公顷的棕榈油种植面积

棕榈油行业在马来西亚受严格监管

几乎占据了我们农业土地的70%以上

但它们的生产力很高

棕榈油种植可以持续约30年

棕榈油成熟后 将在接下来30年中持续为油脂行业结果
