欢迎回到我们“油与美食”的课堂

我是本节课的主讲老师汪勇

上节课我们一起揭秘了“垃圾”食品的美味秘诀

这节课我们就来走进川菜的世界一探究竟吧

中国西南的“天府之国”---四川

素有“烹饪天国”的美誉

川菜即四川菜肴

是中国八大菜系之一

中华料理集大成者

川菜以家常菜为主

高端菜为辅

取材多为日常百味

也不乏山珍海鲜

其特点在于红味讲究麻辣鲜香

白味口味多变

包括甜 卤香 怪味等多种口味

代表菜品有毛血旺水煮肉片

夫妻肺片火锅辣子鸡等

总之川菜简直就是美食爱好者的天堂

川菜的美味和油的食用密不可分

有些川菜油比较重

充分体现了“油多不坏菜”

在四川旅行最不可错过的项目

大概就是在防空洞里

品尝地道的火锅了吧

提到重庆火锅

不得不说便是火锅的灵魂伴侣---火锅底料

也许你会选择好的几种不同的锅底

但是你一定不会错过牛油锅底

为什么大家吃火锅都选择牛油锅底呢

用牛油主要是因为牛油比较香浓

比较粘稠

可以挂在烫好的肉菜上增加口感

牛油是从牛脂肪组织中提取出的油脂

是动物脂肪

饱和脂肪酸含量较高

有独特的风味

为人们所喜爱

尤其是在热气腾腾的火锅中

风味更浓郁

我们都知道

火锅底料的制作需要大量油脂做为原料

在火锅底料熬制过程中的

动物油脂难免会发生氧化

这些氧化会产生令人愉悦的香味

油脂在火锅底料中起到增香作用

改善口味丰富口味

并在食用过程中覆盖在水的上层

起到保温的作用

火锅中的油脂也不断溶解

食材中的油溶性调味物质

在涮火锅的时候

油脂吸附到食物表面

起到很好的增味作用

另外棕榈硬脂是在棕榈油

冷冻结晶后分提出来的固体部分

与牛油具有类似的形态结构及熔点

因此理论上棕榈硬脂

可作为原料油脂替代牛油

用于类似产品的生产中

但是到目前为止风味方面和牛油还是有差异

除了火锅底料

我们平时吃火锅时

一定会调制一个自己喜爱的油碟蘸料

大家知道为什么吃重庆火锅一定要搭配油碟吗

一来油碟可以提味

使火锅的味道更加鲜美

二来刚烫好的肉食和蔬菜都很烫温度很高

但是菜品在油碟中过一圈以后

可以降温不至于烫坏舌头

损坏味蕾

油碟的用油也非常讲究

正宗重庆火锅一般都搭配芝麻油油碟

油碟千千万

为什么大家独宠芝麻油呢

火锅麻辣鲜香烫齐聚

确实是人间一大美味

但是烫烫的

麻辣的味道有时候会损伤我们的肠胃

其实老祖宗在发明重庆火锅的时候

都已经考虑到这一点

据《神龙本草经》一书中介绍

芝麻油具有降高温防口腔

肠胃烫伤的功效

二是芝麻油具有清热解毒

主伤中虚赢补五脏益气力

长肌肉 填髓脑 坚筋骨 等作用

三是芝麻油含有芝麻酚等天然抗氧化剂

另外芝麻油浓郁的风味

令人愉悦也是主要的考虑因素

讲了这么多关于重庆火锅的知识

想必大家也对重庆火锅有了更深入的了解

另外还有一道火遍大江南北的四川名菜---毛血旺

可能很多同学都品尝过

毛血旺起源于重庆嘉陵江畔的磁器口

是重庆市的传统名菜

属于重庆菜

具有麻辣烫

鲜香的特点

麻辣鲜香汁浓味足

开胃除湿

近年来红遍大江南北

毛血旺制作的关键一步

是在上菜之前淋上一层辣椒油

热油与食物相互交融

滋滋作响

最后浇上的红油可以让菜品的滋味

香味以及色泽得到提升

说起辣椒油它可是食中一绝

其制作方法相当讲究

大蒜头晾干后和老姜皮

辣椒粉一起用植物油熬煮

植物油是良好的溶剂

将这些香辛料中的油溶性物质提取到油中

制成辣椒油

这些物质在热油熬煮过程中

会发生变化变得更辣

正宗的毛血旺

盆内的红油不会少于一半

而且油滑透亮

不浑不浊

其汤汁红亮麻辣鲜香

味浓味厚的特点

油少不仅影响味道和口感

也不利于保温

在顺序上

建议先吃肉类后吃白菜粉丝等物

因为菜叶易"挂油"吃起来更辣

循序渐进

先从不太辣的吃起
