今天我们进入
西餐宴请礼仪的学习
在国外有一项调查显示

就是在餐桌上

合作伙伴一起用餐
想要在商业里获得成功
用餐技巧和谈判技巧的地位
是不相上下的
因为
在用餐时
缺乏礼仪
往往是不可原谅的
而西方人秉承的礼仪文化理念
与中国不同
所以中西餐礼仪
差别也很大
今天
媛媛老师就从餐具开始说起
为什么把西餐餐具
叫做餐桌上的兵器铺呢
因为每次同学们看到西餐餐具时
都会发出各种惊叹声
很多同学在想
西餐餐具不就是要用刀叉吗
为什么老师能拿出
至少20种以上的餐具呢
而光是刀和叉就不止10种呢
那我们先来
看一下
媛媛老师的兵器铺吧
在桌子上摆放的这些东西
都是西餐用餐时使用的餐具
其实这些还不全
如果是在英式正统的西餐礼仪中
餐具的使用
比现在更为复杂
其实在正式的西餐宴请中
首先最让我们摸不到头绪的
应该是刀和叉
由于西餐的菜品比较复杂
因此吃不同的食物
使用的刀叉也不尽相同
而且要吃一道菜
换一副刀叉
西餐使用的刀一般分为
前餐刀
鱼肉刀
白肉刀
红肉刀
和黄油刀等等
比较特别的是鱼肉刀
因为鱼肉刀和其他刀子的样子完全不同
鱼肉一般比较嫩
所以鱼肉刀不需要锋利的齿
就可以很容易的把鱼肉切开
吃开胃菜的刀比吃肉的刀小
吃红肉的刀比吃白肉的刀锋利
在我们的餐桌最左边有一个小盘子
放了一把很小的刀
这把叫黄油刀
黄油刀主要是用来将黄油
涂抹到面包上的
西餐中的叉子和刀是相呼应的
在餐桌的两边
有几把刀就有几把叉子
叉子中比较特别的是鱼叉
因为一般的叉子有4个齿
而传统的鱼叉是有三个齿
当然现在我们也有四个齿的鱼叉
吃白肉和鱼肉的叉子是一样的
但前餐的叉子要比鱼叉要小一些
此外
在吃甜点时
比如说吃蛋糕或派的时候
我们也会使用到甜品叉
它会摆在盘子的上方
在西餐的餐桌上
我们见到的最多的
就是3种类型的勺子
一把大的
一把中等的
一把小的
材质是不锈钢的
这与中餐的瓷勺完全不同
大的这把是用来喝汤的
中等的是用来吃甜品的
比如吃冰淇淋
或者布丁的时候使用
如果你点了一杯咖啡或茶
那么对应的咖啡和茶
也会有一把小勺子
而这把小勺子
主要是用来搅拌的
在使用勺子时
需要注意三点
在西餐的餐桌上
一般至少会有三个盘子
左上角放黄油刀的这个小盘子
是用来放面包的
在正前方有两个盘子
上面的这个盘子是用来吃开胃菜的
而下面的这个盘子是用来吃主菜的
在正式的西餐宴请中
都是用一种特殊的盘子来盛汤
但在意大利
也习惯用这种双耳碗来盛汤
在西餐当中
不同的菜品需要搭配不同的酒
所以西餐的杯子也是五花八门的
喝香槟
喝红葡萄酒
白葡萄酒
啤酒
烈性酒
和喝水的杯子都是不一样的
比如喝红葡萄酒的杯子比较大
而且有个肚子
喝白葡萄酒的要小一些
而喝香槟的杯子
又细又长
喝水的杯子替代性比较大

要使用不同的杯子
了解完西餐的各种餐具
那我们来看看这些餐具
在摆放的时候
有哪些技巧和注意事项呢
第一
左叉右刀
汤勺在右
主要的刀叉勺的摆放
是按菜品的餐具
从外向里
使用的前后顺序来摆放的
第二
叉勺朝上
刀锋朝里
也就时说
叉子和勺子要朝上这样摆
而不能向下这样摆
刀子的刀锋要朝向里面
放在面包盘里的黄油刀
无论横着放还是竖着放
刀峰都朝向里
第三
品尝甜品的勺子和叉子
放在盘子的上方
而且上勺下叉
勺把朝右
叉把朝左
第四
固体在左
液体在右
也就是说
面包盘永远在左边
杯子永远在右边
在刚才的餐具介绍里
媛媛老师没有提及餐巾
那是因为餐巾在西餐礼仪中
实在是太重要啦
在西餐席位礼仪中
我们学习过
西餐礼仪中
女主人是第一主人
所以如果女主人没有就坐
并暗示开席
其他人是不能够开始用餐的
餐巾是用餐时无声的信号
当女主人铺开餐巾
就暗示用餐开始
而当女主人把餐巾放在桌子上
就暗示用餐结束
此时
无论你是否已经吃饱或吃完
都不能再继续用餐了
如果是没有主人的情况下
我们需要知道
坐下后立即去取用餐巾
会让人觉得你已经迫不及待了
别人可能会这样想
难道这个人肚子这么饿吗
为了避免这种尴尬
我们要掌握好拿起餐巾的时机
最好的办法是看其他人拿了之后
再去取自己的餐巾
展现出自己的平和
冷静的气质
切记
用餐前
尽量不要急于触碰
桌子上的物品
餐巾除了用于暗示外
其实它最主要的用途
是用来擦嘴的
在酒店专业术语中
我们把餐巾称为口布
为了保持餐巾擦嘴的部分
永远干净
使用时应折叠平整
擦嘴时应永远使用里面的部分
即使有污渍
从外面看上去
应该一直都是整齐干净的
切记
如果在使用过程中
餐巾不小心掉到了地上
或者是餐巾不干净了
可以请服务员换一块新的餐巾
在用餐时
应将折叠好的餐巾先放在腿上
之后再打开
打开后将餐巾横向对折
开口向外
平铺在自己并拢的大腿上
最好用双手打开餐巾
将折放的过程
悄悄地在桌子下面完成
切勿将餐巾抖开
吸引他人注意
切记
不能将餐巾围在脖子上
那是婴儿的做法
或塞在口袋里
让人误以为你要把它带走
在用餐期间
除非你要站起来
否则餐巾
应该随时盖在你的腿上
如果暂时离开座位
可以将餐巾再折叠一下
放在椅子上
回来后
将餐巾按原来的样子
放回到腿上
在用餐结束时
餐巾只需叠放在桌子上即可
可以从中间拿起餐巾
将其松散地放在盘子的左边
切记
在国内
很多西餐厅习惯把餐巾
压在盘子下面
其实这种方式
很容易在起立或走动时
将餐盘不小心拖拉滑动
所以这种餐巾的使用方法
我们是不太赞同的
刚才我们见识了各种西餐刀叉
那么这些刀叉具体要如何使用呢
左手拿叉
右手拿刀
手肘自然打开
夹肘旋腕
这是吃西餐的基本姿态
刀和叉的拿法都是将食指伸直
按住刀叉的背部
利用拇指和食指来控制刀叉的使用
在切东西时
左手拿叉按住食物
右手拿刀将食物切成小块
但美式和欧式的吃法
略有不同
美式通常先将食物全部切成小块
然后把餐刀放在餐盘右上角
刀锋朝里
再把叉子换到右手
拿叉子慢慢吃
欧式是边切边吃
也就是把食物切好后
用刀把食物放在叉子上
或者直接用叉子把食物放到嘴里
对于中国人来说
也许更喜欢美式吃法
因为对于刀叉的使用
更为简单些
但在正式的商务宴请中
欧式吃法不仅仅让你变得更优雅
食物的味道也会变得更加美味
当然
在吃某些不需要使用刀子的食物时
直接用右手拿叉子吃就可以啦
一般拿叉子的方法和拿勺子一样
有点像握铅笔的姿势
刀叉还有另外一个非常重要的功能
就是可以传达出
用餐中和用餐完毕的信息
用餐中
当把刀叉摆放成八字形
叉齿朝下
刀峰朝里
放在餐盘上
则表示还要继续用餐
如果把刀叉并列摆
叉齿朝上
刀峰朝内
放在餐盘上
这就代表着用餐已结束
当然
在使用刀叉的时候
我们还有一些小技巧和注意事项
第一 从最外面用到最里面
在吃西餐时
如果所有的刀叉都摆放在桌子上
那你只需要从最外面用到最里面
第二 在很多餐厅
刀叉不会摆放出来
而是根据顾客所点的菜品
送上对应的餐具
无论桌面是否有刀叉
吃完一道菜后
服务生都可能把你的刀叉一起撤掉
这时候千万不要找服务生
再要已经使用过的刀叉了
第三 在用餐过程中
千万不要手持刀叉
四处挥舞摇晃
这是很不礼貌的
也是很危险的动作
第四 拿刀叉时
不要翘起兰花指
第五 没有使用过的刀叉
放在餐桌上就好
使用过的
一定不要再放回餐桌上
