我是媛媛老师
今天我们进入西餐菜品的学习
在吃中餐时
我们使用的是圆桌
更多的是大家对食物
共同分享的过程
而在西餐礼仪中
我们使用的是方桌
西方人喜欢自己吃
自己点的食物
即使两个人点了不同的食物
也不会出现你尝尝我的
我尝尝你的的情况
在正式的西餐宴请中
菜品是被一道一道的呈现到
宾客面前的
我们把它称之为
西餐的七道菜
开胃菜也称为头盘
味道以酸
咸为主
在西餐中充当前奏曲的角色
鱼子酱
鹅肝酱
熏鲑鱼
都属于开胃菜
虽然量少
但质量较高
当然
在很多时候
我们也可以用
开胃酒来代替开胃菜
在中国
我们的习惯都是先吃菜
再喝汤
但在西方
汤要在主菜前来吃
这样可以裹胃
从营养学的角度上来说
先喝汤对健康更有益
但西方人喝的汤
要比中国的汤更浓一些
常见的有
奶油汤
蘑菇汤
俄式罗宋汤
法式葱头汤
意式蔬菜汤
美式蛤蜊汤等等
西餐的第三道菜
也就是我们说的副菜
一般会用海鲜
以鱼类为主
比如
海水鱼
贝壳类
和软体动物类
主菜主要以肉
禽类菜肴为主
原料一般取自于牛
羊
鸡的肉
比如中国人比较熟悉的牛排
常常会搭配蘑菇汁
西班牙汁
浓烧汁
白尼丝汁等等
在美国
沙拉会在主菜前面
或和主菜一起吃
但欧洲人更喜欢吃完主菜
再吃沙拉
因为欧洲人喜欢一边吃肉
一边喝葡萄酒
而在喝葡萄酒的时候
是不太适合同时吃沙拉的
吃完主菜之后
便是甜品
西餐的甜品
比较常见的有
冰淇淋
布丁
奶酪
蛋糕等等
西方人在用餐结束前
会喝一杯咖啡
就和很多中国人
饭后喜欢喝茶的道理是一样的
主要是为了帮助消化
当然
也会有西方人选择喝红茶
或者是餐后酒
那有些同学问了
是不是吃西餐的时候
这七道菜都要吃呢
如果是在正式的商务宴请中
宾客是没有权利选择菜品的
每一道菜在之前都被确定
并呈现在宾客面前
但如果是与自己的商务伙伴
或者是同事共同进餐
七道菜可能会变成四道菜
一般会有汤
主菜
沙拉
甜品或者是咖啡
或者更少
比如只有主菜
如果你实在拿不准该吃什么
也可以询问一下服务生
或者在菜单里找找
主厨推荐
在国外餐厅你可以观察到
无论男女老少
几乎很少有人
会剩下食物在盘子里
所以大家可以根据自己的喜好
先选择自己想吃的主菜
然后根据自己的食量
搭配其他喜欢的菜品
比如汤
副菜
沙拉等等
关于西餐的七道菜大家已经清楚了
那是不是就代表着
你就会吃西餐了呢
媛媛老师有一次带学生去德国交流
一天早上
佩奇跑过来说
媛媛老师
我今天糗大了
在聊天中
我发现
一个早上
她做了三件和吃有关的糗事
第一吃鸡蛋
第二吃肠
第三喝牛奶
当她拿起鸡蛋
喀喀喀往桌子上一打
所有的人都用很奇怪的眼神看着她
她还在想
大家怎么啦
结果发现她把鸡蛋捏的稀巴烂
后来她想
那不吃鸡蛋啦
吃点肠吧
德国的早餐肠都是一片一片的
佩奇想起媛媛老师说
西餐要用刀和叉
于是她在那薄薄的身体上
切呀切
想着这次终于没有问题啦
结果一抬头
发现其他人都把肠夹在
或者是抹在面包上吃
没有人使用刀叉
后来
她问朋友要一杯热牛奶
结果朋友的回答是
我们只喝冷牛奶
其实餐饮本身就是一种文化
可能很多同学不明白
佩奇到底错在哪里了
那我们就用几种比较常见的食物
来看看中西餐文化的区别
媛媛老师选了五种大家很熟悉的食物
鸡蛋
面包
肠
沙拉
和意大利面
媛媛老师也曾经
被问到过一个
和鸡蛋有关的问题
房东夫人问我
早餐的鸡蛋要吃几分钟的
几分钟的
什么意思啊
我要吃煮熟的鸡蛋呀
后来才意识到
她说的几分钟
其实代表的就是几分熟
就像牛排
有三分熟
五分熟
七分熟和全熟的
大部分的西方人喜欢吃半生的鸡蛋
所以西方人吃鸡蛋
和中国人的方式完全不同
他们是把鸡蛋放在专门的鸡蛋杯里
用勺子把鸡蛋从顶部敲开
然后拨掉上面的鸡蛋壳
再用勺子把鸡蛋掏出来
放在盘子里
或者是掏出来直接吃
还有一种情况
我们也会遇到剥好皮的鸡蛋
比如在西餐的沙拉中
经常会有切好的鸡蛋
这种鸡蛋都是全熟的
所以用叉子来吃就可以啦
媛媛老师是在开玩笑吗
我们怎么不会吃面包呢
拿起来大口的大口的吃
不就好了吗
在西餐中
除非你吃的是早餐或者是简餐
否则面包
不能直接用嘴咬着吃
在一道一道的西餐盛宴中
吃面包时
应该先用手
撕下一口大小的量
再送入口中
而且要边撕边吃
如果是比较硬的面包
应该用刀切一块后再吃
在吃面包时
我们经常会涂抹黄油
果酱等等
正确的方法是
左手拿面包
右手撕一小块
然后把大面包放在左手的面包盘内
用左手拿着小面包
右手持黄油刀
将黄油涂抹到面包上再吃
不能拿着面包直接从黄油盘里抹黄油
也不能拿面包来蘸汤
或者蘸盘子里剩下的酱汁
在前面媛媛老师曾经说过
西餐中的汤要比中餐的更浓一些
而且西餐的汤
是要用汤盘来盛的
在喝汤时
我们用握铅笔的姿势握住汤勺
从内往外舀
当汤勺到达盘子边缘的时候
轻轻地点两下
再将汤送入口中
喝汤时
不能端起来喝
不能吸着喝
不能舔嘴唇
不能发出声音
即使汤再热
也不要用嘴去吹
即使汤再好喝
也不要去舔勺子
如果汤汁剩的不多
可以将盘子稍微倾斜
但要注意的是
不要让汤勺刮到盘底
而发出声音
吃完汤后
将汤勺留在汤盘里
千万不要将汤勺放在桌布上
想要优雅的吃沙拉
其实很简单
先用叉子压住蔬菜
用刀把大片的叶子切成小块
再放入口中就可以了
西餐就餐时
由于餐具的不同
面条的食用方式也与中餐的
截然不同
正确的做法
是用叉子将面条卷起来后
再放入口中
媛媛老师比较喜欢使用勺子
媛媛老师比较喜欢用勺子
和叉子来吃意大利面
左手拿勺
右手拿叉
用叉子挑起几根面条
然后放在勺子上旋转
把完全旋转好的面
放入勺子内
将勺子放入口中
但如果是小的意大利面
比如意大利饺子
通心粉等
也可以直接用叉子吃
吃面的时候
不要用嘴吸
也不要发出声音
这是西餐中最基本的礼仪
西餐的最后一道菜是咖啡或茶
在饮用时
同样要严格遵守西餐礼仪
喝咖啡是西餐最具情调的事情之一
无论咖啡有多烫
都不能用嘴去吹
可以用勺子在杯中
轻轻地搅拌使之冷却
或者等自然冷却一点点后再来喝
拿咖啡杯时
要用食指和大拇指捏住杯耳
千万不要把手指
完全伸入杯耳中
喝咖啡时
可以根据个人口味
在咖啡中添加牛奶和糖
撕开的糖袋不要乱扔
可以放在咖啡下面的小盘子上
然后用勺子慢慢地搅匀
搅匀时不要发出声音
搅拌后
将勺子放到咖啡盘中
切记
第一
千万不要把勺子
一直放在咖啡杯里
第二
咖啡勺是用来搅拌的
而不是用来喝咖啡的
第三
如果是在餐桌前喝咖啡
是不需要拿起咖啡碟的
其实西餐中的茶和咖啡喝法类同
尤其是西方人很喜欢喝红茶
最出名的就是英式红茶
西方人喝茶的方式
和中国最大的不同
是喜欢加糖或牛奶
但千万不要过量
