今天我们依然邀请到郝老师和刘老师
一起来和我们聊一聊
餐桌上的用餐礼仪
那我们就开始吧
童老师
我有一个疑问
像这种正式的宴请和我们平时吃饭
应该不太一样吧
直接这样开始
总觉得缺少点什么
其实这需要从头分开讲
当客人
特别是主要客人就坐好之后
就可以开席了
主人可以第一杯酒来开席
边举杯边说祝愿或感谢的话
所以
主人开酒也就意味着开席了
接下来
一般由主人邀请主宾开菜
主宾也应礼貌开动
千万不要一个推让一个
这样大家就开始不了了
主宾可以说
来来来
一起一起
这时主人也要陪主宾一起开菜
而且一般来说
无论上任何一道菜
如果主宾尚未动筷
其他人不宜率先取食
我们要说说转菜的问题了
郝老师刚才是从左手边逆时针来转菜
首先方位不太对
在宴会中我们只能顺时针从右手边来转菜
而不能逆时针转动转盘
对对对
中国人讲究顺势而为嘛
肯定要顺时针转了
是的是的
我之前没有注意到这个问题
那如果有道想吃的菜品
就算离我的左手边最近
也要从右手边顺时针的方向转过来

我们转菜应该是这样慢慢地顺时针
从右手边的方位转过来
而且一定要看看有没有人正在夹菜
等对方夹完
才可以转动转盘
其实这样做
还能很好的体现尊重餐桌上的客人
想想看宾客是不是都坐在
主人的右手边呢
那顺时针这样转过来
菜品首先自然就会先让客人能够品尝得到

我忽然想到一个场景
有时候在饭桌上看见一道菜很想吃
刚要转过来
但是这个时候有朋友过来敬酒
敬酒完坐下来之后
发现菜早就被转走了
这样一晚上来来回回
很是无奈呀
确实是
这样的场景大家或多或少都遇到过
对吧
在餐桌上要求我们取菜时
应等菜肴转到自己面前
从靠近自己的盘子开始夹起
绝不能站起来
或伸长手臂去夹菜
而且一次取菜也不宜过多
所以大家想想就发现了
在餐桌上你能夹取的菜
基本就是你面前
呈30度夹角出去的这个区域
如果碰到刚才所说的情况
那可能有几道菜
确实就会与你无缘了
咱们就是宁可忍着
也不能失了礼仪呀

我想问一下
刘老师是我今天的主宾
我特别想把她招待好
那我能不能给她夹菜呢
那这个问题你要问问刘老师
她愿不愿意别人给她夹菜
不喜欢
我最怕别人给我夹菜了
尤其是夹一些我不喜欢吃的菜
放在盘子里
吃也不是
不吃也不是
嗯
确实是好心
但是呢却给客人带来了困扰
我们强调一个总的原则
可以让菜
就是向客人介绍下这道菜品
劝对方品尝
但不要擅自做主
为他人夹菜
特别是和外国人一起用餐时
哪怕用公筷也是不允许的

这种情况在现实生活中
经常发现
我们应该怎么应对呢
如果主人提醒你
取用你不喜欢的那道菜时
你可以婉转地回答
我吃不下了
对别人硬要夹给的
不合胃口的菜
也不要露出很尴尬的表情
可以和对方说
这道菜确实很好吃
但是我好多年都没有品尝过了
这样既感谢了对方的好意
对方也能听出你谢绝夹菜的意思

还有个问题要请教一下
有一个问题处理不好会很尴尬
有一次我旁边的人想吐鱼刺
直接对着盘子吐了出来
结果用力过猛
差点把鱼刺飞到菜盘子里
天呐
确实很尴尬
那童老师像这种很难处理的骨头
像鸡骨头
鱼骨头
我们应该怎么处理呢
吐出的骨头
菜渣要用筷子取出
像鱼刺
比较细小的这样的一些食物残渣
我们可以用手轻轻地取出来
放在盘子的上沿部分
不能直接吐到桌上或者是地上
但要注意吃饭的时候
如果嚼到沙粒或嗓子里有痰时
要离开桌子去吐掉
千万不能弄到食碟里头

到底要低到哪里去啊
敬酒时
出于敬重
可以使自己的酒杯
较低于对方的酒杯
但对方想要更低时
右手拿着杯子
左手可以托住对方的杯底
保持在齐平位置
和对方一同饮下
如果和对方相距较远
可以以酒杯的杯底轻轻地
碰一下桌子
就表示碰酒啦
这叫过桥式敬酒

像女士一般涂了口红
会在杯子上留下口红印
这种情况需要处理吗

要处理的
口红唇印留在杯壁上不太雅观
我们可以乘大家不注意时
把酒杯悄悄的拿到桌沿底下
再用餐巾纸轻轻地
把它擦拭干净
原来还有这样的小技巧啊
我原来都是为了不重复
一直在第一个口红印上一直喝酒呢
